Lately I’ve been seeing a lot of recipes for something called “onion marmalade.” It looks like a delicious, smooth, savory spread of sweet and sticky onions. And after an awesome cherry sale at our local grocery store ($1.99/lb! What!) I thought maybe the two could be friends and combine to make something extra delicious.
I prefer the chewy texture of caramelized onions over the mushy, paste like texture of an onion marmalade, so my recipe creates a savory, almost candied onion and cherry topping that pairs great on top of burgers, pork chops, or even mashed potatoes (oooo…).
This batch makes up a lot, but if you aren’t feeling up to having this much in your fridge, just scale everything down.
Sticky, chewy, sweet, savory, and meaty. This is my new favorite way to eat onions.
