Now hold on just a minute. Before you go running away screaming, hear me out: sardines are good! (Not to mention they’re really good for you too. I mean REALLY good for you.)

Growing up, my dad always had sardines in the house, and would eat them right out of the can, with some fresh cracked pepper on top. Like I said, sardines are wicked good for you. They’re packed with Omega-3s (you’ve heard that buzz-word around lately, right?) and despite all of the heart problems my dad has faced, I’m convinced that since he loves foods rich in Omega-3s, it’s all of those sardines that made his heart strong enough to take whatever punches life has thrown at him.

Unlike my dad, I like my sardines fancied-up a bit. Hence, this fancy brunch. It’s healthy, savory, and satisfying. You can make the tomatoes and onions a couple of days ahead. Store them in an airtight container in your fridge, they’ll last there for about 3-4 days.

Here we go!

Ingredients
  • 1/2 red onion, sliced
  • two small tomatoes, chopped
  • balsamic vinegar
  • olive oil
  • salt and pepper
  • 1 can of sardines, packed in olive oil
  • 1 baguette, sliced
  • 1 clove of garlic
Instructions
  1. Heat oven to 350 degrees.
  2. On a baking sheet lined with foil, combine sliced onions and chopped tomatoes. Drizzle olive oil and balsamic to coat, and sprinkle veggies with salt and pepper.
  3. Bake veggies for about 15-20 mins or until they’re caramelized and brown.
  4. Toast slices of baguette, and rub with garlic.
  5. Assemble crostini: place onions and tomatoes on top of sliced toast, and top with sardine fillet. You can leave the sardine either whole, or break it up with a fork.

Sardine crostini… sardini? SARDINI! I’ve already become attached to the name.
